Using water from the highest mountain in Mexico, this coffee is naturally decaffeinated using the Mountain Water Process. The result is a smooth and approachable decaf coffee that retains the character of the original beans while removing almost all of the caffeine.

Our coffee is grown at around 1,000 metres in northern Chiapas, Mexico, from Bourbon, Caturra, Typica and Catuaí varieties. The relatively low altitude produces large beans with a naturally smooth character and gentle acidity.

This decaf coffee comes from smallholder producers who deliver their harvest to the San Cristobal de las Casas and Yajalón buying stations in northern Chiapas.
