I was considering trying this blend to create a specialty flavour for my cafe. I am not sure if this would blend nicely or not, I have yet to taste anything similar. Has anyone here had any experience blending the two flavours into something tasty?

There is such a thing as a pistachio latte. They don't seem as popular but I do know Starbucks had them at one time. May be seasonal. You can look into it and taste it for yourself if it is available.
I don't like this combination. I have had it once and it just doesn't taste nice to me. I am not very big on pistachio flavored items however. I do enjoy the nuts just not flavoured items after the nut.
