In terms of the various roast options, what would you consider to be your favorite?
White Roast
Light Roast
Medium Roast
Medium Dark Roast
Dark Roast
I tend to like medium roasts. I have never had a white roast but I have had a few light roasts. I like to have more flavor but not too much. I think most breakfast coffees are medium or medium dark on roast if I am not mistaken.
I like a good medium roast for standard coffee but when I do mixed drinks that are on the sweeter side, a dark roast is better to retain more coffee flavour. If I do a light or medium, it isn't as pronounced.

I liked the cold coffee fancy drinks and I do notice most will either use dark roast or espresso, likely for the reason you mentioned. If you use a light roast then you miss out on the flavour almost entirely!
Light roasts are too mild to be blended with dairy. It can be mixed with certain alcohols and be nice but not any sort of dairy. You lose most if not all of the flavour!
